Recipe for a lip smackin' Smash Cake

Recipe for Harlo's Organic Smash Cake






 Ingredients for Cake
1 box of Vanilla (organic) Cake mix - any brand is fine I switch it up
1 stick of butter (8tbsp) organic and grassfed melted but cooled
1 organic or hormone/ antibiotic free egg
3/4 cup of milk (I used Silk Almond Milk Original)
2 round cake pans 6in X 2in
Directions
Preheat oven to 350 degrees
Grease the cake pans ALOT so your cake doesn't get stuck! I use Canola oil (spray) because it is safe when heated to a high heat!
Mix all ingredients together with electric mixer and pour into the cake pans.
Bake for about 20-28 minutes depending on your stove... my cakes turned out closer to the 30 minute mark but every stove cooks differently!
When cakes are done remove from pans and have them cool for at least 5 hours before trying to frost them!

Ingredients for Frosting {Taste of Home Recipe: just tweaked to organic ingredients}
Vanilla Frosting
4 1/2 cups of organic powdered sugar { I used the brand Wholesome Sweeteners Organic}
1/2 cup of butter organic or grassfed softened
1 1/2 tbsp. simply organic vanilla extract { coupons on website: coupon}
5-6 tbsp. of Silk Almond Milk Original
All natural Red Dye by India Tree { India Tree Red Dye } depending on how pink you want your cake you decide on how many drops. I put in 4 which it didn't come out as pink as I would have liked so next time I would use more!
Directions:
Mix with an electric mixer the butter in a bowl until creamy. Beat in the rest of the ingredients to get the consistency you desire for your cake! Then add the desired amount of red dye. Mix with a spatula and spread on your cooled cake!

Harlo Turns One

Pretty in Pink and oh so Sweet!
My little girl (Harlo) has turned one. As a mom this is one of those moments where you aren't sure if you are going to burst with tears of joy or tears of sadness. Time flies and I want my little girl to stay little forever. Never grow up I tell her. Tears of joy streamed down my face as I went to get Harlo out of her crib that birthday morning. There my little girl standing up a big smile across her face jumping up and down, saying "mama" "mama". I grabbed and hugged her wishing her a "Happy First Birthday"!!! My husband (Nick) and  I planned a day to remember her birth and all the special moments leading up to this momentous day. Nick and I decorated the house in everything pink because the theme of her birthday was "Pretty in Pink".

Harlo's birthday outfit is from LPK Designs {Etsy}. Lauren P who is the talented shop owner makes incredible creations. The tutu was handmade and just gorgeous! The onesie with "one" written in gold also from LPK Designs.

As a healthy food nut I made Harlo's smash cake with all organic ingredients. I will be honest the cake mix was from a box... although the frosting was homemade. The recipe is in a different post! Harlo enjoyed her cake, so much every time she took a bite she would smack her lips! Organic Plum Brand Mango/Sweet potato puffs were used to make the "H" in the front of the cake.





















Harlo had a fabulous first birthday with her whole family and I am happy to share it with all of you!
